After a recent visit to Hill’s Country, where she mentioned having pasta with shrimp , I got a hankerin’.
So I done some up, and Saw that It Was Guuud:
Lemon Shrimp and Wilted Baby Spinach over Squid Ink Linguini.
That’s how I got so big!

So, tonight, a Spinach Salad, Chef-Style, with cheese, smoked turkey, grape tomatoes, green and black olives, and some Hen-Of-The-Woods mushrooms which I pickled:
Ate me up a buttload of it, I did.

Organic baby spinach wilted in extra virgin olive oil, with garlic scapes, roasted garlic, roasted red peppers, pine nuts, capers and some shiitake mushrooms, served over fresh, local raviolis filled with spinach and ricotta cheese:

OK, enough of the socio-political stuff – it’s time for dinner!
Tonight, some fresh Spinach and Roasted Garlic Raviolis, topped with a Hot Sopressata and Ramp Cream Sauce, and served with a side of wilted organic baby spinach and red Cerignola olives:

UPDATE: This tasty dish got stuck in WordPress’ craw ’till this morning, so “tonight” looks a little goofy up there. Musta been one of those unpitted olives…

OK, so tonight I got down to the business of assembling yesterday’s ingredients into tonight’s dinner!
I started with some fresh raviolis stuffed with artichokes, roasted tomatoes and mascarpone, added some oil-wilted baby spinach, and tossed it all with some green olives marinated in herbs de Provence and a rustic pesto of roasted red peppers, almonds and garlic:
It did me fine.

So the good vibes from all you folks out there in the ‘Sphere, combined with the TLC administered by Ultimate Spawn during her school vacation, finally sent my fever packing.
And it’s about time, if I do say so myself. Holy Cow, was I ever sick! My personal Six Days War culminated in a weekend hibernation, cocooned in comforters and sipping tea, sleeping eighteen hours at a stretch, waking only long enough to moan pitifully, roll over and go back into that defensive torpor.
Yesterday was a visit to hell, an unavoidably full work day of sledge hammering stakes into the frozen ground with one good arm, alongside a busy urban thoroughfare in frigid temps, punctuated by coughing and retching fits and several hasty retreats into the nearest thorny hedgerow.
I wish you all something better, I really do.
At any rate, today I awoke hungry at the five o’clock alarm, and considered it a good sign. The cough remained, but gone was my swimming vision, and my brain seemed to have ousted the burning phosphorous brick which had occupied my skull since last Wednesday.
I managed a cup of coffee and a piece of toast before heading back out into the Working World, then held off ’till dinner time for a real meal.
And tonight, like a newly awakened bear tearing into a thawing Spring log, I scarfed together some of my Fridge’s Finest and made a Welcome Back meal of things I vaguely remember dreaming of in my infirmity, some fresh greens I had hoped would keep, some cream I trusted to be fresh enough to last.
It all came together in about fifteen minutes of trance-like auto-pilot kitchenery:
(still) Fresh Raviolis stuffed with Portabellas and Fontina Cheese, in a Cream Sauce with Spinach and Prosciutto:
These had barely hit the plate when they were passing my tonsils, accompanied by the glorious strains of a choir of angels.
Not the fanciest meal I ever made, but definitely a cut above the two cans of soup which were my total weekend’s caloric intake!

…and fairlane, no onions!
Tonight I threw together a few things which caught my fancy down at our “local” (only an hour away) Whole Foods Market, starting with some locally-made fresh spinach ravioli stuffed to bursting (almost!) with roasted garlic, ricotta and triple-creme mascarpone:
This I topped with miataki mushrooms and baby spinach in a chipotle cream sauce.
All ingredients were organic, though I’m sure that didn’t keep the calorie count below the 1 million mark!
People, I try not to pat myself on the back too often (hard on the shoulders, you know,) but this was SO. DAMNED. GOOD!
…I nearly cried.
Really.
