Let’s kill two birds with one stone, shall we?
My dinner postings have been scarce lately (I know, “Long time no sea(food!)”) and it’s officially Tuesday, so I’m calling the little bit of red in these shots sufficient to justify this dual-category post.
The ingredients:
Gigunzo Shrimp, marinated in lime juice, garlic and cayenne pepper; whole-kernel corn, fresh tomatoes, blanched and peeled, a diced Serrano chile, about a bulb of coarsly-chopped garlic and a handfull of basil, all organic, and a bag of black squid-ink pasta.
The result:
Spicy Garlic Shrimp and Veggies over Black Fettuccine.

After an angst-filled hiatus populated with dollar cheeseburgers and too much beer, I’m tonight not only moved to cook something good, but to share it with you.
Here’s my version of Thai cooking – Coconut Curried Shrimp and Scallops with Basil and Vegetables:
This came out really tasty, with hints of coconut milk and lemon grass bumping the wonderfully sweet scallops into orbit, and fresh-chopped basil added at the last minute. Served over steaming Basmati rice, the entirety was most satisfying!
As the pieces of my personal life settle into something closer to predictability, I hope to be able to share more of my dinners with you nice folks.

After a recent visit to Hill’s Country, where she mentioned having pasta with shrimp , I got a hankerin’.
So I done some up, and Saw that It Was Guuud:
Lemon Shrimp and Wilted Baby Spinach over Squid Ink Linguini.
That’s how I got so big!

I saw this, and needed to eat it: little pasta bags, tied with God-knows-what, and stuffed with smoked gouda and roasted pear.
So here’s my treatment of this gastronomic anomaly, Shrimp and Garden Veggies with Wild Mushrooms served with Sachettes of Smoked Gouda and Pears:

Dinner With TCR – The Baked Edition February 2, 2008

I’m not a baker.
As much as I enjoy cooking, I just never got into baking.
Oh, I did bake the most extraordinary pan of brownies once – they came out a shocking shade of Kelly green.
We giggled about that. We giggled A LOT.
But fast forward to the present. I was planning to do a shrimp dish, served on a bed of herbed polenta, when I came across a really doable-sounding cornbread recipe from Paul at Byzigenous Buddhapalian (the recipe’s in the comments.)
By the way, Paul, you’re too humble – good “Comfort Food” is as good as food gets, and your dinner sounded absolutely wonderful!
Anyway, with Paul’s recipe in hand, I set out to make my first cornbread. And in typical Runtian fasion, I changed things up a bit. I mean, I was originally going to use an herbed polenta, so why not an herbed cornbread?
So I cut the sugar by 2/3 and added a bunch of my fresh-killed sage and oregano. And a couple of finely food-processed jalepeños.
And since “bacon grease” came highly recommended as both an ingredient and pan greaser, I added two crisply rendered and crumbled bacon strips to the mix.
It came out unbelievably good!

Then for the shrimp:
Got the Big Fatties at a good price, and having heard from a radio chef that the shells have the most flavor (as beef bones add so much flavor to stocks and such,) I left the shells on and cooked them just briefly in a spicy tomato and cream sauce, with lots of lightly sautéed onions (except for you, fairlane – fresh baby spinach would be a great substitute!)
Then I ladled that steaming amalgam over the cornbread, and – voila!

OK, so since struggling with difficult cultural vantages for a week and girding my loins and pouring my heart out generates fewer responses than blogging about my dinner does, here’s what I had last night:
Grilled coconut shrimp over a jicama slaw, topped with a generous dollop of curry aioli and served with the seasonally ubiquitous side of garden fresh tomatoes and basil with local mozzarella.
