Earlier this week I had a delicious dinner of boneless chicken breast sautéed with ramps, the latter courtesy of neighbors Frau Biergut and Miz Lu(mena.) Their afternoon of foraging was obviously productive – Thank You, Ladies!
But by tonight I still had half a breast left, and it was time for Drastic Measures. So out came my little food processor, and the result was a Curried Chicken Salad, here served on a bed of field greens with tomatoes and kalamata olives:
‘Twas guud, and will make a perfectly passable lunch as well.

I would totally be snatching olives off your plate when you weren’t looking. You aren’t quick to stab with the fork, are you? I may reconsider….

I had Dr. McDougall’s Black Bean & Lime soup-in-a-cup for dinner. Gimme some olives!

One of my favorite sandwiches is a curried chicken salad – chicken, salad dressing, curry, raisins, green onions, and cashews…. very very yum…..
Ramps are wild leeks. They are really good grilled like scallions or all by themselves. Mmmmmmmmmm.

And Thanks, Frau B. – they filled my place with the most amazing fragrance before they went under the cook’s knife, such an interesting niche between garlic and leeks.
And I saw my first couple of fiddleheads today, so perhaps this weekend…
I do eat but have never been much of a connisseur of fine food.. but it looks very good indeed.
Instead, I’ve been feasting on your nature photos and they are very impressive. You say you only recently became a photographer? If so, you must have discovered an inborn talent but really the eye is everything and you do have that. Beautiful vision.

I had lemon/asparagus ravioli, with asparagus (notice a theme?) wrapped in Proscuitto, dressed with da good oil and some garlic.

And Susan, thank you. Like most Americans, I’ve dabbled in photography almost all my life, but just this year got “the bug” and started taking it more seriously, investing recently in a DSLR. I’m pleased that you’re enjoying the results!
On a food related note, I picked up a bunch of young, tender turnips at the farmers market on Saturday and made the wonderful discovery that, in addition to the turnips being luscious beyond all description, the greens were mild enough to make a salad. Oh, with goat cheese. They also loved being sauteed with massive quantities of garlic. Yay for new discoveries!
